  1. Chop the crisp ingredients

Rinse the produce. Core and dice the apple, chop the cucumber and finely grate the ginger. Squeeze the lemon and remove seeds.

Your cue: Small apple pieces help reduce coarse bits in the finished glass.

  2. Blend · about 30 sec

    Start with cucumber & greens

Add water, spinach and cucumber to the jug. Secure the lid and blend for about 30 seconds, starting low.

Your cue: The cucumber should become part of the liquid, with finely dispersed spinach.

  3. Blend · about 45 sec

    Finish the blend

Stop and add apple, lemon juice, ginger, chia and ice. Blend for about 45 seconds. If it stalls, stop and add a little water before restarting.

Your cue: Check for apple chunks; tiny peel and chia flecks are expected.

  4. Pour before it thickens

Wait for the blades to stop and check the texture. Pour promptly, or cover and refrigerate for later. Stir in a splash of water if the chia makes it thicker than you like.

Your cue: This is an unstrained smoothie with body, rather than a clear green juice.

The finish line

Here’s what you’re aiming for.

A light green, fibre-rich blend that thickens gently as the chia hydrates.

Too thick, thin or grainy?

Blending times are starting points; use the texture cues and your blender’s instructions. Loading order is for a typical upright jug. Switch off before scraping or tasting, and never put utensils into moving blades.

Pro tips

  • Add 1/2 cup Greek yogurt to turn it into a full breakfast.
  • Swap half the apple for pear if you prefer it sweeter.

Frequently asked questions

Yes, but kale is stronger. Start with half kale, half spinach and remove the tough stems.
