- Measured cucumber and avocado portions
- No juice, banana or added sweetener
- Total carbohydrate and fibre shown separately
Ingredients
1 serving- 1 cup (104 g)sliced cucumber
- 1/4 medium (50 g flesh)ripe avocado
- 3/8 cup (85 g)plain non-fat Greek yogurt

The method
Let’s blend this.
Think cool, savoury and refreshing rather than sweet. Ripe avocado supplies the creamy texture while cucumber keeps the finish fresh.

Prepare the green ingredients
Wash the cucumber and mint. Slice the cucumber into small pieces and scoop the measured avocado flesh away from its skin and stone.
Your cue: The avocado should yield to a spoon. Very firm avocado can leave waxy pieces.
20–30 seconds
Blend the cucumber with the liquids
Add the water, lemon juice, cucumber and mint to the blender. Secure the lid and blend for 20–30 seconds before adding the thicker ingredients.
Your cue: The cucumber should break into a pale green liquid with small mint flecks.
30–40 seconds
Make it creamy
Stop the motor and add the yogurt and avocado. Replace the lid and blend for another 30–40 seconds, until the colour is even.
Your cue: Check for a smooth surface without pale avocado chunks.
Check the finish
Taste and check the pour. If it is too thick, blend in one tablespoon of cold water at a time. Serve as written before experimenting with fruit or sweeteners, which change the carb estimate.
Your cue: Expect a gently tangy, creamy drink with visible tiny mint flecks.
The finish line
Here’s what you’re aiming for.
Pour into a small glass and enjoy promptly for the freshest green colour. This is a snack-sized blend, not a complete meal plan.
Too thick, thin or grainy?Blending times are starting points; use the texture cues and your blender’s instructions. Loading order is for a typical upright jug. Switch off before scraping or tasting, and never put utensils into moving blades.
Pro tips
- Contains milk. Plain yogurt varies by brand; use its label when counting carbohydrates.
- The nutrition panel lists total carbs. Net carbs here means total carbohydrate minus fibre using US-style data; this subtraction is not appropriate for every international food label.
- This recipe does not treat diabetes or guarantee ketosis. If you use a medical carbohydrate plan, follow the portion and counting approach from your care team.
